Even if we grill Chile con Queso Skillet Enchiladas in the backyard or bake them at home on a winter day, the adventure and freedom of camping is at the heart of this carefree and soul-satisfying dish featuring Hatch New Mexico roasted green chile, in a creamy, melty sauce.

Chile con Queso Skillet Enchiladas

1 10-oz jar Let Thy Food Chile con Queso
2 cups water
1 cup chopped spinach
1 teaspoon sea salt
5 oz Jackson’s Honest Tortilla Chips (or 1 dozen corn tortillas cut into 1/8th size triangles)
Tomatoes, Onion, Avocado, for garnish

Preheat oven or grill to 450F.

In a large bowl, mix together Let Thy Food Chile con Queso, water, chopped spinach, and sea salt until thoroughly combined.

In a medium deep skillet or small casserole pan, layer chips or corn tortillas in even layers, alternating with sauce. Pour remaining sauce over chips or tortillas. Cover pan with lid or parchment and foil. In oven or top rack of pre-heated, covered grill, bake, covered, for 25-30 minutes. Remove cover and bake an additional 5-10 minutes until bubbly and lightly golden on top.

To serve, garnish with tomatoes, onion, and avocado. Great with black beans and rice or quinoa, or salad greens. Enjoy!
