Let Thy Food Queso Superfood Biscuits

Let Thy Food Queso Superfood Biscuits

2 cups gluten-free all-purpose flour
1 teaspoon sea salt
1 teaspoon granulated garlic
1 1/2 teaspoons baking soda
4 oz coconut oil
1 10-ounce jar Let Thy Food Queso Blanco or Let Thy Food Chile con Queso
1/2 cup Let Thy Food Santa Fe Jack Superfood Parm

Preheat oven to 425°F. Line a baking sheet with parchment.

Mix flour, salt, garlic, baking soda, and 1/4 cup Superfood Parm. With a pastry blender or fork, mix the coconut oil into the flour mixture until thoroughly incorporated. The mixture will be crumbly with bits remaining (no larger than pea-size).

With fork, gently mix in Let Thy Food Queso. If needed, add 1/4 to 1/3 cup water to the mixture, enough to hold the mixture together lightly. Do not overmix, as gentle stirring will keep the biscuits tender, flaky, and light.

Transfer the dough to a cutting board and gently pat into a disk approximately 3/4″ thick. Cut into rounds with a biscuit cutter. Place onto baking sheet. Sprinkle tops of biscuits with remaining Superfood Parm.

Bake for 22 to 24 minutes, until deliciously golden brown. Others will begin to gather around. This is normal. Serve warm. Watch the biscuits disappear.
