These. Are. Amazing. Green Chile Chedd’r Bac’n Biscuit Queso Lentil Sliders are everything you’d want in a slider: tender and flaky biscuit; decadently flavorful lentil burger; and melty, creamy Chedd’r Bac’n. Preheat your oven and get going on these! They are so very delicious!

Let Thy Food Chedd’r Bac’n Biscuits

2 cups gluten-free all-purpose flour
1 teaspoon sea salt
1 teaspoon granulated garlic
1 1/2 teaspoons baking soda
4 oz coconut oil
1 10-ounce jar Let Thy Food Chedd’r Bac’n Dip

Preheat oven to 425°F. Line a baking sheet with parchment.

Mix flour, salt, garlic, and baking soda. With a pastry blender or fork, mix the coconut oil into the flour mixture until thoroughly incorporated. The mixture will be crumbly with bits remaining (no larger than pea-size).

With fork, gently mix in Let Thy Food Chedd’r Bac’n Dip. If needed, add 1/4 to 1/3 cup water to the mixture. Do not overmix, as gentle stirring will keep the biscuits tender, flaky, and light.

Transfer the dough to a cutting board and gently pat into a disk approximately 3/4″ thick. Cut into rounds with a biscuit cutter, or, if you are feeling particularly artistic, a knife. Place onto baking sheet.

Bake for 22 to 24 minutes, until deliciously golden brown. Others will begin to gather around. This is normal. Serve warm. Watch the biscuits disappear.

Chile con Queso Lentil Burgers

3 1/2 cups cooked black lentils, divided
1/4 large onion
1/4 cup Let Thy Food Chile con Queso
1 teaspoon garlic

Preheat oven to 425 F.

In a food processor, combine 2 cups of cooked, drained, and rinsed black lentils with onion, Let Thy Food Chile con Queso, and garlic, until thoroughly mixed and resembling thick batter. Place mixture in large bowl and stir in remaining 1 1/2 cups black lentils until evenly mixed.

Scoop into 10-12 evenly sized mounds onto parchment-lined or lightly oiled baking sheet. Flatten slightly to form burgers. Bake for 20 minutes.

To assemble sliders, split Green Chile Chedd’r Bac’n Biscuits in half, and top with lentil burger, Chedd’r Bac’n Dip (or Chile con Queso), lettuce, and tomatoes. Enjoy!
